April Menu Plan

Often I get asked "Do you really menu plan for a whole month?" I do menu plan a month at a time because it helps me stay organized and provide healthy homemade dinners for my family. Monthly menu planning is not for everyone but, it works great for us! Each day of the week has a theme at our house. Mexican Monday, slow-cooker Tues., pizza/pasta Wens., leftover Thurs., breakfast Fri., soup/sandwich Sat., and grillout Sun. I leave veggies and fruit blank b/c I like to buy fresh each week. I get what is on sale that week and add it to our meals.

I'm Back!

Have you ever heard people say that they need a vacation after their vacation? That's me! We had a blast but, vacations can seem so crazy too. I'm glad to be back home saving money instead of spending $$! Everytime I go on vacations I seem to come back feeling guilty about the splurge. I seem to think of the children with no toys as we play at Disney or the people with no clean drinking water as we splash in the pool. Am I crazy or do these things pop into your mind? I'm so grateful for what we have!

Frugal Friday Homemade Easter/Spring kid stamps

I'm a craftie ( Is that a word?) at heart. I love making things with my hands and love to do kid crafts with my son. One way to keep my son interested in crafts (He is almost 9)is to come up with messy and crazy craft ideas. Here is one frugal craft we enjoy!

Potato Stamp

small Easter/Spring cookie cutters

Eskimo cookies

These cookies are so yummy and kid-friendly! My son made these for Christmas and they went fast!

Eskimo cookies

1 stick soft butter
1 tsp vanilla
3/4 cup sugar
2 TB cocoa
2 cups oatmeal


Mix all up in a bowl. Roll into balls. Roll in powdered sugar. Place in fridge til' cool. All done. They kind of look like snowballs:) Check out others ideas at http://lifeasmom.com/.

I went to Hy-Vee today to get some more of the Hy-Vee deal I posted. While I was in the organic section I also seen Kashi Vive cereal marked down to $1.00. That is a great deal but, using $1/1 Kashi coupon made these FREE for ME! I refrained from grabbing them all at the price of FREE! I have never tried this flavor of cereal before but, we do love Kashi around here.
You can call your local Hy-Vee to make sure they also have this HOT deal. I am thinking this type of cereal might make some really great homemade granola bars:)

I went into Hy-Vee today to get some milk to last us til' we leave on vacation and decided to check out the organic section. I found a 2-pack of Kashi cereal for $5.99 and on the box it had a coupon for a free box of breakfast bars. This is the deal I came up with:

Ultimate Recipe Swap Homemade Noodles

One memory of when I was little that has always stuck in my mind were the times I shared making homemade noodles with my mom. I'm not sure if it was the fact that she would let me unroll the noodles or how great they tasted in her Chicken noodle soup.

Homemade Noodles

2 eggs
2TB water
1-1/2 cups of flour
dash of salt and pepper

mix it all together, roll out thinly on a floured surface, roll up like a pumpkin/swiss roll, cut into 1/4 inch noodles, then unroll, let dry for 3 hours.
I always place in boiling chicken broth so they don't stick together and cook til' they are not doughy. These noodles can be frozen also and tooken out when needed.

Frugal Friday

When enough bad service is enough!

Where did "customers are always right" and "customers are your boss" thinking ever go? I know there is some great customer service out there. In fact I actually go to a supervisor after each great checkout experience and brag about the cashier to them. I advise anyone who experiences great customer service to do this as well. After all we want those great ones to stick around!
Today on the other hand had to be the worst customer service I have ever gotten! In fact I would call this experience a customer non-service! A few days ago we took our car into Wal-mart to get the oil changed and service done. Upon driving home my husband noticed a weird noise. We knew that we had a recall service that needed to be done on our car and had made an appt. to do so. Today we went in for our recall service and they told us at the dealership that whoever checked our air filter last busted our air filter case and it was $106. That was the weird noise and that Wal-mart was responsible to pay for it. We then went to Wal-mart to show them the papers from the dealership and they called us liars. To make this story short we are not foreseeing any payment from them!
I have slowly been shopping less and less at Wal-mart and more and more at Target over the last few months because Target has great deals! They are always clean and to tell you the truth I haven't had any customer service problems with them except once (about a coupon). O.K. I just needed to vent a little and I realized today enough bad service is enough for me and I can get great deals somewhere else! However I will still post a great Wal-mart deal if I can't find it at another place. I know alot of you still shop at Wal-mart. $30 oil changes/filter checks at a store who calls their customers liars are not in the cards for us anymore. Ultimate Recipe Swap

Like many others I also have tricks when it comes to making lunches. I make homemade lunchables and homemade uncrustables once in a while. Here is how:

Homemade lunchables

You will need a Bento box or 3 small containers
crackers (any kind) I go for the ones I get for free or cheap with coupons
lunchmeat or leftover ham/turkey slices
block or slice cheese

place crackers in 1 cont.
cut lunchmeat/meat in squares or circles and place in 2nd cont.
cut cheese in squares or circles and place in 3rd cont.
There you go you have a homemade lunchable. You can add a pc. of leftover V-day candy. I usually add fruit and a reusable jug of juice.

Homemade uncrustables

You will either need a Pampered chef Cut-N-Seal — $9.00 (this is what I use) ,a knife. or biscuit cutter
a reusable sandwich wrap (this is what I use) or some kind of bag
bread
fillings (pb&j, lunchmeat, honey)

Make your sandwich like normal but, don't place fillings on edges
cut into circle with your choice of cutter
place in bag or wrap
Don't forget to feed the birds the crust or save for homemade stuffing:)

Menu Plan Monday


I don't like to waste food because to me food thrown away is like throwing away money. When I menu plan I think of ways to use leftovers and sometimes freeze them to use later. We might have BLTs one day, tacos the next, chef salad the third day, bacon,eggs,toast the fourth and so on just to use up things that spoil quickly. It is rather simple but, saves tons of money!


Monday- Grilled ham and cheese, salad (leftover ham from Sun. and leftover salad from tacos last week)

Tuesday-Chicken Cordon Bleu, garlic bread, veggies ( leftover ham from Sun.)

Wednesday-Beef goulash, garlic bread, corn* (leftover garlic bread from Tues.)

Thursday-Country Ribs, oven fries, veggies*

Friday-Chicken-zuccini pizza, veggies* ( leftover zuccini from zuccini/pineapple bread and leftover chicken from crockpot chicken )

Saturday-BQ pulled pork on Onion bun, soup (leftover pork from pork roast)

Sunday-Roast, potatoes, carrots (maybe I will make hot roast beef sand. later with these leftovers)

Potluck Broccoli Chicken

This is actually my husbands recipe. My husband cooks about 2 times a year besides grilling out! He made this when I was prego with my son and I loved it. It is really simple and cooks great in the crockpot. Here is what you will need:

2 cups cooked boneless chicken breasts cut in bite sized cubes
1 can of Campbells broccoli cheese soup
2 cups frozen broccoli
1/2 can of milk
2 cups of minute rice or cooked regular rice
salt and pepper to taste

Valentine's Ultimate recipe swap

For a few years now I have been packing treats in my son's school lunch for V-day. I like to make a balanced meal with a theme for holidays. I pack a heart shaped PB&J, strawberries, a treat, and a "LOVE" note from mommy. I'm packing a heart shaped sugar cookie this year! Here is the recpie. Also check out ways to have a Frugal Valentine's Day here.

3-1/4 cups flour
1 -1/2 cups sugar
2/3 cup shortening
2 eggs
2-1/2 tsp baking powder
2 TB milk
1-1/2 tsp vanilla
1/2 tsp salt

I mix all the ingredients in a large bowl. Refrigerate 2-3 hrs. Preheat oven to 400 degrees. lightly grease cookie sheet. Roll out dough and cut with floured cookie cutters. Place cookies 1/2 inch apart. Bake 8 mins or until very light brown. Remove cookies. Place on cooling racks. When cooled frost and decorate as you want!

5 Little things in my kitchen that help me save $$$

1) My plastic bag dryer from reusablebags. I use this everyday to dry ziploc bags after washing so, I can reuse them and for drying reusable water bottles that I pack in my sons lunch.

2) A clean/dirty homemade magnet for my dishwasher. I made this by using one of those free picture frame magnets and a piece of paper that says clean on one side and dirty on the other. I love this because my son (he puts up the dishes) knows when they are ready to be put up. This saves me from rewashing them.

3) My foaming soap dispenser. I put whatever soap I have on hand (usually that I got free) in there and add water. This cuts back on spending $$ on expensive hand soap.

4) My crockpot. I can cook a whole chicken or roast in there, then use it for 2-3 meals. I can also save on dishes by not using 3-4 pans.

5) My menu plan. I have a calendar that I use to plan my meals for the month which saves me a ton of $$.Check out http://lifeasmom.com/ for some of her ideas to save $$$.

I had a larger list of things I wanted to get done today but, my freezer only holds so much (I don't have a deep freeze yet). Here is what I did get done today:

1 loaf of corn bread
1 batch of Honey Wheat rolls from 5dollardinners recipe book (my son loves these)
and Homemade laundry soap

I LOVE the $5 dinners recipe book!! I've actually added about 10 meals out of there to my Febuary menu plan! YUM!!

Eat From the Pantry UPDATE

Things have been going great! I'm so glad I saved so much in groceries this month because our car window got broke into last weekend and that extra $$ went there. I would have much rather spent the $$ on a new kitchen table that I really wanted but, hey what do you do? I think I am going to try to spend the least I can next month as well and maybe I will get that table afterall:) Wish me luck!! I am guessing I saved about $250.00 this month eating from my stockpile!

Frugal Valentine's Day

I love holidays! And here are some ideas I have to make Valentine's Day special, cheap and stress-free!

1) Make your own Valentine's. Last year (school sale 2009) I picked up some (20) rulers at Walgreens for $0.09 each (I think I got them FREE with RR) and we are going to make contruction paper hearts that say "You Rule" for my son's class. Last year we melted crayons in muffin tins and wrote on card stock "You color my World" (I got this idea from the Family Fun magazine). The things I like about these cards are that they don't have candy attached and they can be used for a while.

2) Cheap or FREE candy. I used to get my son a huge heart of candy but, so did everyone else and to tell you the truth we still have holiday sweets hanging around. I just picked up 2 huge (4.25 oz) Hersheys candy bars up at Walgreens today for 2/$1 and plan on giving 1 to each my husband and son with a cute little note. Thats it! You can also pick up some after Christmas candy and do a little bag if you choose.

3) Make your own cupcakes or sweets. I had picked up cake mixes for $0.39 at HyVee a few months ago (I was thinking ahead and grabbed a pink one) and I will make homemade frosting. This is a yummy project for less then $0.50!

4) Make lunch special with a lil' extra LOVE and TLC! I love to pack my son's lunch everyday. I know what he is eating and it makes me feel good to know he will actually eat it. For Valentine's I like to send a heart shaped sandwich, choc. pudding with strawberries, a special homemade treat, and a lil' note to tell him I love him.

5) Go out for less. http://www.restaurant.com/ has gift cards for a fraction of the price and can help you stretch your buck when you go out. Look for coupon codes to pay as lil' as $1 for a $25 card. Make sure you read in detail about the gift card. Some have a min. purchase.

6) Stay in. Use a FREE Redbox code to rent a movie or 2 and cuddle on the couch.

7) Holiday crafts always gets me in the holiday spirit. How about making a cardboard heart, cut out the middle, and put red tissue paper in it. You could put this on your window with a light behind it and watch it glow. You could recycle those packing peanuts and make hearts on red or pink construction paper with them. There are so many FREE or cheap crafts out there. Check the internet!

8) Remember Valentine's Day is about LOVE not $$$! You don't have to spend alot to show someone you love them!

My 10 ways to save money on a vacation!

I am not a vacation expert! I thought I would warn you that what works for me does not work for everyone! Here are 10 ways I save money on a vacation:

1) FREE samples of cereal and snacks in the mail-I pack these goodies in a small suitcase (make sure the exp. date is after vacay date) I have enough cereal to feed our vacation party of 4 breakfast for our whole trip to Disney in April.

2) FREE or Cheap after rebate or coupons -snacks, juice, paper plates, paper bowls, and plastic silverware can provide you with enough supplies to serve up breakfast and snacks for a whole trip.

3) FREE toiletries samples by mail will prevent you from having to buy minis and the fact is not all hotels have everything you need. I have tooth floss and mouthwash samples that I can but, don't want to live with out. This is also a good time to use up perfume samples and others.

4) FREE after coupon items in stores like the bandaids and Johnsons first aid kits I got for free at Target this week can make life easier if placed in your purse or glovebox during a trip.

5) Reusable water bottles can be a lifesaver and moneysaver. Staying hydrated with plenty of water is smart and FREE if you use these.

6) Use items you have already to entertain your kids on the road. I heard of many people buying new toys or STUFF ( I don't like STUFF) to entertain kids. How about printing off puzzles or games, pulling out something that they haven't played with for like forever, using a clipboard to draw what they did on vacay or write postcards(on the way back) to relatives and friends(we are doing homework since we are going during the school year), borrow a portable dvd player from a friend (I'm doing this-Thanks you guys), and maybe just maybe enjoy your trip by looking out the window and enjoying the sights!

7) Keep a look out for new deals that come up after you book your vacation. Disney let us add a deal to our vacation package($300 gift card which will pay for our lunches and dinners during our stay) that my husband found(YES!!! there is hope for him yet to join the frugal side)!

8) Get FREE vacation related materials to have as keepsakes. You can get a free autographed picture of your favorite Disney character. Just send a letter to:

You need to include the name of your favorite Disney character and the address you want the autographed photo mailed to. These would be great to take with you to disney and get signed instead of buying them there. These do take a lil' while to get so, do this in advance! You can also find color pages or pictures of anything online to have autographed on your vacation no matter where you go.

9) Set a spending limit and stick to it. My sons spending limit is what he saves up until the vacation. He has saved some Christmas money and sold some of his old toys and a bed set to increase his spending limit.

10) PLAN ahead! This is a big one! You don't want to forget something you need and have to buy new.

Eat From Your Pantry update

The Eat From Your Pantry Challenge is going great! I'm looking forward to seeing the bottom of my freezer! I did go over my $20 grocery limit by a lil' bit for this month but, I kind of figured it would be hard anyways to stick to that. Here is what I bought (I'm done shopping til' Feb. 1st):
